I'm sorry you've been having health problems. I'm allergic to cow's milk and have to watch that I don't eat too much gluten too. I can have goat and sheepmilk cheese--there are some lovely varieties. Manchego is a favorite here. We also drink almond milk (by Silk), rice milk, and occasionally Silk soy milk. We use these in recipes as replacements for milk as well and they work.
We found a REALLY good cookbook for gluten free yummies--"Gluten-free Baking Classics" by Annalise Roberts. Remember, I have at least one cookie-baker elf in this house and we HAVE to have some baked goods now and then. They taste really good and people can't tell the difference when we serve them.
As for pasta, the brand that we like the best is Tinkyada PastaJoy. It doesn't get all mushy like so many gluten-free pastas. In fact, we're having some tonight!
Oh my - that's quite a shock... Sorry, I'm lucky enough not to have problems with that, maybe you should google a bit for recipes... Don't let that diagnosis get you down, at least you know now why you were feeling not so well... I know, easier said than done...
We don’t like the coconut milk either. I don’t think almond milk is too watery—soy milk is definitely not, but you’ll want to get the refrigerated Silk brand. We always buy our milk from the refrigerated section rather than the asceptic packages. I’m not sure whether you would define the rice milk as watery or not, but my husband likes that the best on his cereal.
Oh no! I'll have a thunk on recipes for you. I eat very little things with gluten, although a few mroe with dairy, but I do eat a lot of goat's cheese as well as cow's milk. Afraid my brain is a tad fried from work right now, but i'll try and come up with something by the end of the weekend
